Who doesn’t like one pot or one sheet meals?! 😋
I’ve never met anyone. And why wouldn’t we? They’re easy, convenient, and usually require minimal cleanup. Not to mention, they are just as tasty as a multi-step recipe. 💪
Yes, I am talking about the fajitas recipe. You can “sweat” making fajita spice blend or use store-bought fajita seasoning. It’s all about personal preference. 🌶️

Today, I am sharing a One Pot Chicken Fajitas, an easy, quick, and flavorful Mexican dish you will make repeatedly. All you need to do is toss chicken slices and veggies with spices and oil and cook. That’s it!
NOTE: The fajitas recipe makes 6 servings so that you will have some leftovers for the rest of the week (I create all the recipes for four people).
If you want to take your fajitas game to the next level, I promise to share a classic fajitas recipe one day. We will make a homemade fajitas blend at home and marinate the chicken. There will be a bit of work, but it’s worth it!! 💃🏻
But for now, let’s stick with the quick and easy version. You can always add your own twist by using different veggies, replacing chicken with beef or shrimp, and adding some heat with more chili flakes. 🌶️
I had leftover fennel, so I went ahead and made Roasted Carrot & Fennel Salad. I mixed the roasted veggies with arugula and spinach and sprinkled with feta cheese. Healthy. Yummy. Easy. 💯
What’s next? Spice Crusted Salmon & Beets made in 25 minutes. 😍😉 I feel like no matter what spice blend you choose with salmon, you always end up with a delicious meal. This one is no exception; the combination of spices gives the salmon a nice crust and pairs perfectly with beets.
Finally, a dessert. Have you heard about cookies made with hard-boiled eggs?? 🍪🥚 These Italian butter cookies are a game-changer. They are so easy to make (use any cookie cutter you have on your hands).
What’s more? You can store them in airtight containers or a tin box for 1-2 weeks! It makes sense to double the recipe… Trust me, you won't be able to stop at just one cookie.
Don’t you have time to cook every day? No problem! Spend 2-3 hours on a Sunday or any other convenient day preparing meals for the week ahead. This will save you time and make eating healthy much easier during busy weekdays.

#1 Frozen poultry should be thawed in the refrigerator, not at room temperature. It can also be defrosted under cold running water.
#2 When a recipe calls for “1 cup sifted flour,” it means it should be sifted first. When it calls for “1 cup flour, sifted”, it should be measured before sifting.
